Minestrone is one of those comforting, filling soups that we crave on a cold Winter’s day. It is so easy to pack with vegetables and protein, and just feels like a big hug inside! The best thing is that you only need 1 pan which means less dishes to wash up afterwards!
INGREDIENTS:
1 onion, diced
2 carrots, diced
1 courgette, diced
1 bell pepper, diced
2 celery sticks, chopped finely
4 garlic cloves, minced
1 can beans of choice
150g macaroni or other small pasta
1 tsp salt
1 tin chopped tomatoes or passata
1L vegetable stock
2 tsp mixed herbs
1 tsp chili flakes (adjust to your preference!)
1/2 tsp black pepper
Few handfuls washed spinach
METHOD:
Start by heating up some oil in a deep saucepan and sauté the onions. Once the onions become translucent, add in the chopped carrots, courgette, bell pepper, celery and garlic. After a few minutes, add in the beans, macaroni, salt, chopped tomatoes and stock. Season with herbs, chili flakes, pepper, then bring to a boil. Once the pasta is fully cooked, turn off the heat and add in the spinach to wilt. Enjoy!
